Cauliflower Cheese

This simple and delicious Cauliflower Cheese is classic comfort food.

Serves 4

1 head cauliflower, broken into large florets
1 x Creamy White Sauce recipe
1 tbsp grainy mustard
100g grated Origin Earth Takenga Gold

1              Preheat oven to 200°C.

2              Wash cauliflower thoroughly and place in a large saucepan of salted water. Bring to the boil and cook for 3–5 minutes, until the cauliflower just tender. Drain and set aside.

3              Make Creamy White Sauce as per recipe. Once thickened, remove from the heat. Stir in mustard and half the cheese. Set aside.

4              Arrange cauliflower in an ovenproof baking dish. Pour over sauce, ensuring the cauliflower is completely covered. Scatter with remaining cheese and bake for 25–30 minutes, until the top is golden brown and bubbling.

Variation: Add cooked, chopped bacon and/or chopped herbs of your choice to the sauce with the mustard and cheese.
