Cheesy Scalloped Potatoes with Ham

These Cheesy Scalloped Potatoes with Ham are great way use that leftover Christmas ham. It is also great made without the ham. For a complete meal serve with a green salad.

Serves 4-6

Melted butter or oil for brushing baking dish

60g butter

¼ cup plain flour

2 cups Origin Earth Milk

1 cup grated Takenga Gold Cheese

4 medium potatoes, scrubbed and thinly sliced

1 cup chopped or diced cooked ham

Chopped parsley, for garnish (optional)

1              Preheat oven to 180°C. Brush a 23 x23 cm baking dish with melted butter or oil and set aside.

2              Place butter a saucepan and melt over a medium heat. Whisk in flour. Gradually add milk, whisking constantly until thickened. Remove from heat and stir in cheese until melted.

3              Place half the potatoes in a layer in the prepared baking dish, then top with half the ham. Evenly spoon over half the cheese sauce. Repeat layers.

4              Bake in preheated oven for 1 hour or until the sauce is bubbling, top is golden and potatoes are cooked through.

5              Garnish with chopped parsley, if desired.
