PINK & WHITE TERRACES (WASHED RIND)

 

The original New Zealand Pink & White Terraces were known as the eighth Wonder of the World and were destroyed in a volcanic eruption in 1886. Our Pink & White Terraces is a soft pungent cheese with a rind which is a mixture of pink and white cheese moulds giving the cheese not only its name, but also its characteristic taste.

This soft washed rind cheese is washed each alternate day with brine and white vinegar, creating a sticky pungent pink and white rind, which after about five weeks, imparts its flavour right through the cheese. Don’t choose a subtle wine to drink with this cheese!

Washed rind cheeses have been made in Europe since the Middle Ages and are characterised by their soft supple texture, sticky orange surface and earthy pungent aroma. Washing the rind encourages the growth of the surface culture Brevibacteium Linens which gives this cheese its appearance, flavour and aroma.
